Lava restaurant in Tenerife has become the only Canary Islands establishment shortlisted for the "Best Opening of 2025" at TheFork Awards, marking a significant milestone for the region's fine-dining scene.

Canarian cuisine is making a strong comeback on Spain’s fine-dining map. The Lava restaurant in Puerto de la Cruz has been named the only establishment in the Canary Islands to be shortlisted for "Best Opening of 2025" in the fifth annual TheFork Awards.

This is a significant achievement, as the list of 41 nominees—spanning 14 regions—was curated by a committee of 56 Michelin-starred chefs. With industry icons like Martín Berasategui, Ángel León, Elena Arzak, Paco Morales, and the Torres brothers involved in the selection, the Tenerife restaurant’s inclusion serves as a prestigious endorsement of its innovation and technical skill.

This nomination highlights a growing trend: the shift of culinary excellence away from major mainland cities. Projects like Lava prove that by combining high-quality local ingredients with sophisticated techniques, the islands can now compete on equal footing with the rest of the country.

The final decision now rests with the public. Until October 11, diners can vote online for the "People's Choice Award," a title that recognizes how well a restaurant has been received by its guests.

The winners, chosen for both their culinary concepts and service excellence, will be announced on November 16 at the Gran Teatro Caixabank in Madrid. For Lava, this event is a major opportunity to showcase the impact of island cuisine and establish a reputation far beyond the Canaries.
