Canarian cuisine has found a unique home at the highest point in Spain. The Teide Cable Car has introduced a line of artisanal ice cream designed to turn a simple dessert into a cultural experience. Led by head chef Josué Mendoza, this initiative aims to showcase regional identity at an altitude of over 2,300 meters.
Established throughout 2026, the project features twelve flavors highlighting iconic island ingredients like gofio, banana, palm honey, and frangollo. The menu is notable for its technical skill, including a Canary Island pine ice cream made with mastic resin—a process similar to traditional Aegean techniques—and several recipes centered on local goat’s milk.
Beyond the food itself, Mendoza’s strategy highlights how popular tourist spots can act as ambassadors for local tradition. While there were initial concerns about how international visitors would react to such distinct, traditional flavors, the positive response has proven that authenticity is more popular than globalized, standard options. This approach allows visitors from all over the world to experience modern interpretations of recipes that might otherwise be lost to time.
Available year-round, the ice cream is divided into three categories: classic, Canarian, and a premium "gold" line. By offering these unique flavors, the Teide Cable Car has successfully expanded its menu while turning local products and culinary history into an essential part of the National Park experience.
