Canary Islands Hotel Schools Offer Public Taste of Pope’s Official Menu

The Canary Islands Hotel School network is offering the public a chance to dine on the three-course menu originally prepared for the Pope’s recent visit to Gran Canaria to showcase student culinary expertise.

The Canary Islands Ministry of Tourism and Employment is bringing its hospitality training out of the classroom and onto the table. The Canary Islands Hotel School network (Hecansa) is now offering the public a chance to taste the menu originally created for the Pope’s recent visit to Gran Canaria. This initiative aims to highlight the high level of skill achieved by the school's students and instructors.

The three-course menu, prepared by a team of fifteen, focuses on local ingredients. It features a Firgas watercress cream soup with zucchini cannelloni, cheese, and Hermigua gofio; a main course of pressed black pork served with shore cabbage, baby zucchini, and carrot hummus; and a chocolate dessert finished with island orange jam. The meal, which includes wine pairing, water, and coffee, costs 25 euros per person.

Minister Jéssica de León emphasized that the project is a teaching tool, designed to showcase the technical rigor required for such a high-profile banquet. Beyond the historical connection, the event allows the local restaurant industry to see how traditional, locally sourced ingredients can be elevated using fine-dining techniques.

The menu will be available over two weekends. Guests can book a table at the Hotel Escuela Santa Brígida in Gran Canaria on June 30 and July 1, or at the Hotel Escuela Santa Cruz in Tenerife on July 7 and 8. Reservations are required to manage demand at the training facilities.
